Bill Gates: “Food Is Ripe for Innovation”: Bill Gates knows a thing or two about innovating (Microsoft, anyone?), so when he writes a piece about how to change the way we eat, it’s probably a good idea to give it a read. His main point in this article for Mashable is that with the world’s population set to reach 9 billion by 2050, there won’t be enough arable land on which to raise livestock if our current rate of meat consumption continues. But meat eaters, don’t despair: Gates goes on to talk about a few companies that are finding ways to recreate not only the taste, but texture, of meat using plant products.
