People Who Eat More Vegetables Think the Glass is Half Full: We’ve all heard the saying “an apple a day keeps the doctor away,” but how about “a carrot a day keeps the blues away?” We might have to add it to the lexicon, because researchers at the Harvard School of Public Health have found that people who have high blood levels of healthy plant compounds, known as carotenoids, also tend to be more optimistic about the future. So if you’re having a down-in-the-dumps kind of day, try munching on some collard greens. It could be the difference between a glass half-empty and a glass half-full.
