Located on Madroño Ranch in Texan Hill Country, the weekend-long events are the brainchild of Jesse Griffiths, owner of Austin’s Dai Due butcher shop and supper club, and author of Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish. Griffiths leads Hog School throughout the year, where guests learn how to hunt and butcher. Perfect for the sportsman who wants to shoot his or her wild boar and eat it, too.
