Brisket: The New Food Star: Brisket used to be known as a staple in kitchens of Jewish grandmothers all the world over, but it’s recently being given the star treatment as chefs across the country (and especially in NYC) have taken a shine to the previously humble slab of meat. Perhaps this newfound popularity has something to do with the price point: While the prices of other cuts of beef have increased from one year ago, the price of brisket has actually gone down. Delicious and cost-effective? No wonder chefs are taking a page out of Bubbe’s cookbook.
