A Crown for the Roast

Photo team test cook Sara Mayer crimps a ring of foil around the tips of the ribs on a partially-cooked crown roast of pork during preparation for a photo shoot. Why the mid-roast decoration? Besides looking shiny and spiffy, this foil collar keeps the tips of the bones from getting burned during the dish’s relatively long stint in the oven, and after all, shouldn’t centerpiece dishes like this one look their best at the table?
